The Michelin Guide 2012 has awarded three stars to Umberto Bombana鈥檚 Hong Kong-based Otto e Mezzo. It is the first restaurant outside of 天美传媒 to be awarded with such an exceptional grading.
One of the most notable ingredients, a testament to the chef's absolute focus on fine ingredients, are the top-of-the-line white truffles. The menu includes a lobster and mozzarella 鈥榮alad鈥 with a prized Belon oyster delicately submerged in Bellini and homemade tagliatelle with intense pork ragu (made with pata negra) and wild fennel.
The chef-owner, who previously headed the kitchen at the Hotel Ritz Carlton in Tuscany, has also previously worked abroad in Los Angeles. Critics have described his culinary creations as 鈥渟cented postcards of the bel paese鈥.
"It's a dream come true," said Bombana, an 18-year veteran of Hong Kong.
